What makes the stop worthwhile is that the food here is genuinely different from anything else within a long day's ride. Chef-owners Jen Castle and Blake Spalding launched the restaurant in 2000 and built it around a working organic farm — the kitchen draws from gardens and a six-acre farm that supply vegetables, fruits, herbs, and flowers, while local ranchers provide grass-fed beef and lamb. The menu they describe as "Four Corners Cuisine" — cowboy classics, Mormon recipes, and Southwestern fare updated with what the farm is actually producing that week.
The restaurant is open spring through fall and closed in winter, so timing matters. Dinner is served Thursday through Monday; Tuesday and Wednesday the kitchen is dark. Seating is available indoors or on a covered outdoor patio. Reservations are recommended — walk-ins are sometimes possible, but this place draws riders and road-trippers from well outside the region, and Boulder has no fallback options if you miss a table. The operation is run on Buddhist principles of sustainability and community responsibility, and that ethos shows in how seriously the kitchen treats sourcing: almost nothing is wasted, and produce that isn't served fresh gets preserved for later in the season.
